Will probably depend on your Sony HU, but take a look at these:-

I'm not super up on the Sony HU's, but I'm using one similar to that Autoleads adaptor to hook up my Kenwood KDC-W7544U to the steering controls and TID dash display of my Zaffy.

What about a Pioneer HU? I'm looking to swap the CDR-500 in my girlfriends Vectra. What type of adapter cables do I need to get the steering wheel controls to work properly? I couldn't see anything useful at pioneer's site.

You won't get them from the head unit manufacturer, they are an aftermarket item.
They come in two parts, in this case you will need a Vectra remote adaptor and a pioneer patch lead.

Do the cardealer carry them or a caraudio store? Or do I have to search the web?

The pioneer patch lead should be included with the HU I take it.

You'll get them from the car stereo stops but please don;t get autoleads products as in my experience they don;t work with Pioneers. I'd recomend connects2

The pioneer patch lead will have to be got to and will be made by whoever makes the steering wheel controls
