Itunes will find all the music on your computer when you first install it.

Any more you want to add you can do it from file (mp3 etc) or from a cd.

You can choose what extension itunes saves music as in the options. I just use high quality mp3 (320k). But you can use the apple lossless converter too.

Music from itunes will either be found in your music folder or

    "C:\Documents and Settings\Dan Millen\My Documents\My Music\iTunes\iTunes Music"

As for outlook express, i'm afraid i dont use it so cant help you there mate!

If its music youve added using itunes its as above, can always right click and click on 'get info' to see the file location.

Outlook express address books - if you go into the address book then File > Export, then go from there.

Not sure on email locations though, theyre somewhere though as our IT manager recovered my old mail when OE got reinstalled.
