How hard is it to plumb an oil cooler in?

Thinking of getting one for my Z20 LET as my oil seems to run at a very high temp, around 110-115'c. Seen a few on ebay like this.....

The sanwich plate fits between the oil filter and block to route the oil through the cooler before/after the filter.
