Can anyone advise me the best way to repaint the chrome 'V' part on the grill please? I want to experiment with another colour, but what is the proper process involved to get a good finish?

You`ll need to etch prime it first Al, otherwise the paint wont stick.

I did my MK3 grill with that stick on heat mouldable foliatec suff. Simple to do once you get the knack (and you can always take it off it you get bored with it).
