    Salami !!!

    Innocent question folks.

    bought a salami today ....best storage advice please ??

    Cool until opened then fridge ?
    or just dry until opened then fridge ??

    I'm not used to 12" of meat, so how many sandwiches could I make from it ??

    Well I wish I had 12" of meat in my possession!

    Store in Fridge if I was you - danger zone is 5 degrees through to 63 degrees for spread of bacteria so a chilled environment is best.

    Depending on how thick you slice you salami I think you might be able to get about 30 sandwiches

    The process for making salami involves it being air-dried in a cool place for up to a year so I am sure it will be fine kept anywhere in the kitchen until it is opened. Refrigerate it for up to 2 weeks. Failure to so will result in it drying up.
